Cleaning Pig Stomach / Maw

– It is very important to clean the pig stomach thoroughly and remove all smell before cooking. Otherwise your dish will be ruined.

Method:

  1. Cut off any excess fat from the pig stomach.
  2. Flip the pig stomach inside out and wash it clean in a basin of water. Pour away the water.
  3. Add 1 tbsp of salt and rub the pig stomach thoroughly with it, like washing laundry 😉
  4. Wash the pig stomach and pour away the water.
  5. Repeat step 3 & 4 again.
  6. Next, rub the pig stomach with 1 tbsp of corn starch and 1 tbsp of cooking oil and knead it like washing laundry again.
  7. Wash the pig stomach and pour away the water.
  8. Repeat step 6 & 7 again.
  9. Put the pig stomach in a wok of boiling water.
  10. When the water boils again, remove the pig stomach and put into water in a basin. Use a knife to scratch off any surface dirt on the skin.
  11. Cut off any visible yellow portion of the pig stomach.
  12. Flip the pig stomach inside out to the correct side and wash with water.
  13. Flip the pig stomach inside out again and put in a wok of boiling water with 2 pcs of mashed ginger.
  14. After 2 mins, remove the pig stomach into a basin of water and wash again.
  15. Rub with 1 tbsp of lemon juice to remove any residual smell before washing again.
  16. Flip it inside out to the right side and wash again.
  17. The pig stomach is finally ready for cooking.
