Creamed Sweetcorn Soup

– This is a easy to cook dish and great dish to bring for potluck. It is a favourite dish of my immediate and extended family.

Ingredients:

  • 2 pkts of sweet corn cream style (380g each or 760g)
  • 1 litre of water
  • 200g of crab meat
  • 2 pcs of fish maw (soaked till softened, then cut into smaller pieces)
  • 10pcs of small dried scallop (soaked and shredded)
  • 2 eggs (beaten)
  • 2 tsp of chicken stock powder
  • 1 tbsp of corn starch with 2 tbsp of water (mixed for thickening the soup)

Method:

  1. In a pot, add the dried scallop and fish maw to the water and heat up till boiling.
  2. Lower the heat, add in the sweet corn and stir constantly.
  3. When the soup comes to a boil, add in the crab meat and stir.
  4. When the soup boils, add in the beaten egg and don’t stir until the soup boils again.
  5. Next add in the thickening corn starch mixture and stir.
  6. When the soup boils again, the dish is done.
