I usually minimised the frying of food as it involves a lot of cleaning up after that. This recipe makes use of the oven to make delicious oven-baked potato wedges.
Ingredients:
- Potatoes (I like to use Brastagi Granola Washed Potatoes)
- Pinch of salt for seasoning
- Dash of black pepper
- 1 tsp of chilli flakes/paprika powder
- 1 tsp of tumeric powder
- 1 tsp of dried basil / chopped fresh basil leaves (optional)
- 1tbsp of cooking oil
Method:
- Wash and dry the potatoes unpeeled.
- Cut each potato into half and then each half into 4 wedges of uniform thickness.
- Put the wedges into a container. Add the oil into the wedges and mix well.
- Add the seasoning and mix again.
- Put the wedges on a baking tray lined with baking paper. The skin side should be facing down.
- I use the healthy fry function on my oven to cook the wedges. Put the baking tray into a preheated oven set at the ‘Healthy fry’ function using my steam oven. Set the timer for 15-20 mins. After the 15mins mark, monitor the wedges. Once a fork can easily pierce the wedges, they are ready
- Alternatively, bake in a convection oven set at 200C for 40mins. You can also use the air fryer or just deep fry on the stove.
- Let is cool slightly before serving with your favourite sauce.
