Pandan Waffles

I already have a waffles recipe but I really wanted to find a localised version using pandan and coconut milk. This recipe is easy and the results are delicious. As I did not have enough coconut milk, I made the following substitutions:

  • 75ml of coconut milk + 125ml of milk (instead of 200ml of coconut milk)
  • 4.5 tbsp of oil + 0.5 tbsp of extra virgin coconut oil (instead of 5 tbsp of oil)

The waffles came out crispy and delicious with the above substitutions. I will experiment further with different ratios as I also do not want to consume so much coconut milk. The addition of the extra virgin coconut oil would give the waffles the coconut flavour.
